Some Physicochemical Properties and Fatty Acid Compositions of Different Originated Anatolian Water Buffaloes Milk Samples

This study was carried out to determine the physicochemical properties and fatty acid composition of milk samples collected from different originated Anatolian water buffaloes living in same farm. The fat amounts were ranged between 5.24 8.67%. acids with highest ratios buffalo belonged C16:0 (palmitic acid), C18:1 (oleic C18:0 (stearic acid) C14:0 (myristic acid). Saturated (SFA) (62.6 67.3 %) found be more dominant than monounsaturated (MUFA) (28.1 32.99 polyunsaturated (PUFA) (3.22 9.57%). Conjugated linoleic contents determined 1.46 % 2.11 %. conjugated similar. It concluded that origin difference effective on milk. is thought results obtained this will contribute obtaining information about nutritional improve technological products.
